Potato Leek is one of my faves...
chop up a leek, sautee in a lil butter in the bottom of a 3-4qt pot, add 2 cups chicken or vegetable stock (one can generally works too) and about 1.5&quot; of potatoes that have been peeled and cubed.

Cover and simmer till the potatoes are soft, add 2 cups half and half, puree with a stick blender. Heat till warm. Salt and pepper to taste.

Serve with some chopped bacon and shredded cheese.</description>

I second the &lt;3 for tomato soup. That&#039;s like.. my favorite soup evar, even though I don&#039;t care for tomatoes... The &#039;recipe&#039;  above seems yummy though, sans beans.</description>

And somehow along the way I became Minestrone soup as well.  Not sure how it happened -- I don&#039;t like veggies typically.  Since we already have the posting of what a Minestrone person is, I won&#039;t restate it here.  Only, my favorite soup has got to be tomato.  When I had my tonsils out I think I had tomato soup for two weeks straight -- my fingernails started to have an orange tint to them.</description>
