…soup…

It’s been cool and foggy here lately, which seems to make for ultimate soup* weather — at least on weekends, when I have time to relax and play in the kitchen.

Recently, I’ve been experimenting with bean soup, which is cheap and easy on the weekend. On Friday night, dried beans get flung heartlessly into a pot of water to drown.  Then, on Saturday afternoon, the beans are rinsed and ruthlessly simmered for a couple hours along with vegetables and some kind of meat. And maybe some herbs.

The last batch included:

  • Soaked and rinsed pinto beans
  • Chopped ham (low fat / low salt)
  • Chopped onion
  • Diced garlic
  • Chopped celery and celery leaves
  • Chopped carrot
  • Bay leaf

Tasty stuff. I know, that’s not really a recipe: throw some beans and chopped stuff in a pot and boil it until everything is appropriately tender. But that’s soup!  It’s easy enough that my twin could probably handle making it.

But we won’t let her do that, given her affinity for fire in the kitchen.

  • I think I will have to try that soup. I typically need a recipe to do anything, but soup with ham is just too yummy sounding to not at least give it a try.

    And somehow along the way I became Minestrone soup as well. Not sure how it happened — I don’t like veggies typically. Since we already have the posting of what a Minestrone person is, I won’t restate it here. Only, my favorite soup has got to be tomato. When I had my tonsils out I think I had tomato soup for two weeks straight — my fingernails started to have an orange tint to them.

    I second the <3 for tomato soup. That’s like.. my favorite soup evar, even though I don’t care for tomatoes… The ‘recipe’ above seems yummy though, sans beans.

    Apparently, I’m chicken noodle…

    Potato Leek is one of my faves…
    chop up a leek, sautee in a lil butter in the bottom of a 3-4qt pot, add 2 cups chicken or vegetable stock (one can generally works too) and about 1.5″ of potatoes that have been peeled and cubed.

    Cover and simmer till the potatoes are soft, add 2 cups half and half, puree with a stick blender. Heat till warm. Salt and pepper to taste.

    Serve with some chopped bacon and shredded cheese.

    Potato leek soup is the ultimate comfort food for me. It was the only thing that interested me in waking up long enough to eat when I had mono in college.
