Weekend food experiments.

I never have enough time to cook during the week, so I did a lot of experimenting in the kitchen over the weekend.
Saturday morning, I wanted to make hashbrowns, but was low on red potatoes owing to the mashed potatoes the night before. I added grated onion, carrots and zucchini to the few potatoes I had and made a sort of vegetable hash. It was alright. Nothing special. Would have been better with just potatoes. (C’mon. I’m Finnish/Irish. I could not live without potatoes.)
We got a few different kinds of fish at the store after breakfast Saturday. I’ve been on a fish kick, so I made some baked sole later on Saturday. It was very simple: covered the filets with thinly sliced onions, chopped tomatoes, green beans, basil and oregano, fresh lemon juice and white wine, then baked for 25 minutes at 450. Served it with greek yogurt and rice pilaf.
I tried making some chai chocolate chip ice cream. It was a custard ice cream. Reminiscent of eggnog, but more peppery. Aya found it too spicy. Brian and Lil called it refreshing and both said they liked it a lot. I think it would have been improved with heavy cream instead of half-and-half, and less spice. I think next time I’m going to try making green tea ice cream.
Sunday was red snapper soup. I’ve never made fish soup before and was afraid it was going to be terribly fishy. Sauteed potatoes, carrots, onions, celery, added water, rice, stock, fish, lemon juice, tomato paste, and simmered for about 15 minutes. It wasn’t terribly fishy and it was actually really good.




Daaaaaaaaaymn! Now I am hungry!
Another potato favorite of mine for the reds is to cut them into quarters, drizzle them with extra virgin olive oil, 2-4 large cloves of garlic, chopped (or more for taste) , (sea or just normal) salt, pepper and rosemary. Bake ‘em in the oven at 400 for an hour or until a fork’ll go through them. Very simple and very delicious!
